Spinach and Cheese Casserole

2 - 10 ounce packages of frozen spinach, thawed

1 onion, chopped

2 cloves garlic, minced

8 tablespoons melted butter

6 eggs, beaten

16 ounces cottage cheese

2 tablespoons all-purpose flour

1 pound sharp Cheddar Cheese, grated

Salt and pepper

 

Preheat oven to 350 degrees.  Lightly grease a 9 x 13" baking dish.  Drain spinach well.  Sauté onion and garlic in 2 tablespoons of the melted butter.  Mix spinach with eggs, cottage and cheddar cheeses, flour and the remaining butter.  Add sautéed onions and garlic.  Season with salt and pepper.  Pour into prepared dish and bake for one hour.  Serves 8 to 10.  Serve as a brunch or dinner with ham and fruit salad.
