Breast of Chicken

Cordon Bleu

2 egg whites

½ teaspoon nutmeg

½ teaspoon paprika

Salt and pepper

½ cup plain bread crumbs

2 tablespoons grated Parmesan cheese

4 skinned chicken breast halves, 6 ounces each

4 slices ham

4 slices Swiss cheese

4 tablespoons butter

Preheat the oven to 375 degrees. In a large bowl, whisk the egg whites with nutmeg, paprika, salt and pepper until they are foamy. In another flat bowl, combine the bread crumbs and Parmesan cheese. With a knife, open the chicken breasts and slice into the side of each one to make an inside pocket. Stuff each chicken breast with 1 slice of Swiss cheese and 1 slice of ham. Dip the breast into the egg mixture, drain and place it in the bread crumb mixture. With the edge of the knife, pat the crumbs into each side of the breasts. In a large skillet, warm the butter and sauté the chicken for 3 minutes on each side. Place the chicken in a baking dish and bake in the over for 15 more minutes. Makes 4 servings.
